Method
In a blender, combine the mixed berries, coconut milk, honey or maple syrup, vanilla extract, lime juice, and sea salt.
Blend on high speed until smooth and creamy, ensuring all ingredients are well incorporated.
Taste the mixture and adjust sweetness if necessary by adding more honey or maple syrup.
Pour half of the berry mixture into popsicle molds, filling them about halfway.
Insert wooden sticks into the molds and freeze for about 1-2 hours until set but not completely frozen.
While the first layer is freezing, pour the remaining berry mixture into a separate bowl. Add some whole or sliced berries into the mixture for added texture and flavor, if desired.
After the first layer has set, pour the remaining berry mixture over the top of the frozen layer, filling the molds to the top.
Return the molds to the freezer and freeze for an additional 4-6 hours or until completely solid.
To remove the popsicles, run warm water over the outside of the molds for a few seconds and gently pull the popsicles out.
