Method
Prep the ingredients: Start by prepping all your ingredients; slice the beef, chop the vegetables, and keep them ready for quick cooking.
Cook the noodles: Boil water in a large pot. Add the fresh rice noodles and cook according to package instructions (usually 2-3 minutes). Drain and set aside, drizzling a little sesame oil to prevent sticking.
Stir-fry the beef: In a large wok or skillet, heat 1 tablespoon of vegetable oil over high heat. Add the sliced beef and stir-fry for about 2-3 minutes until browned. Remove from the pan and set aside.
Sauté aromatics: In the same pan, add the remaining oil. Once hot, add minced garlic and grated ginger, and stir-fry for about 30 seconds until fragrant.
Add vegetables: Toss in the bell pepper, broccoli, and carrots. Stir-fry for 3-4 minutes until they are crisp-tender.
Combine everything: Add the beef back to the pan, along with the cooked noodles. Pour in soy sauce, oyster sauce (if using), hoisin sauce, and mix everything together for another minute.
Season and serve: Adjust seasoning with salt and pepper. Finally, mix in the chopped green onion (white parts) just before serving.
Plate Up: Serve the stir fry in bowls, garnished with green onion tops and toasted sesame seeds for an added crunch!
