Method
In a mixing bowl, combine the glutinous rice flour and sugar, then mix in the water and vanilla extract until smooth and there are no lumps.
Pour the mixture into a microwave-safe dish and cover it with plastic wrap or a lid, leaving a small vent for steam to escape.
Microwave the mixture on high for 2 minutes, then stir. Microwave again for an additional 1 minute, stirring after each minute, until the mixture is thick and somewhat translucent.
Transfer the mochi dough to a clean, cornstarch-dusted surface and allow it to cool slightly until it's manageable.
Once cool enough to handle, dust your hands with cornstarch, then take a small portion of the mochi dough and flatten it into a round disc. Repeat this for as many pieces as you desire.
On each mochi disc, place a slice of banana in the center. Wrap the mochi dough around the banana slice, pinching the edges to seal it tightly.
Place the filled mochi rolls seam-side down on a plate dusted with cornstarch to prevent sticking.
If desired, roll the finished mochi rolls in shredded coconut for added flavor and texture.
