Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine the mozzarella cheese, Parmesan cheese, breadcrumbs, minced garlic, fresh parsley, basil, oregano, and lemon zest. Mix well.
Drizzle the olive oil over the zucchini halves and season them with salt and pepper.
Place the zucchini cut-side up on the prepared baking sheet. Spoon the cheese mixture evenly onto each zucchini half, pressing it down gently to adhere.
Bake in the preheated oven for 20-25 minutes, or until the zucchini is tender and the cheese is bubbly and golden.
Remove from the oven and let cool for a few minutes before serving.
