1.5cupsapples, peeled, cored, and finely chopped (about 2 medium apples)

0.5cuppowdered sugar (for glaze)

Instructions
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, baking powder, ground cinnamon, salt, granulated sugar, and brown sugar until combined.
In a separate bowl, beat the egg, then add the milk and vanilla extract. Mix well.
Pour the wet ingredients into the dry ingredients and mix gently until just combined. Be careful not to overmix.
Fold in the chopped apples and raisins (if using) until evenly distributed throughout the batter.
Using a spoon or ice cream scoop, drop generous amounts of batter onto the prepared baking sheet, spacing them a few inches apart.
Bake in the preheated oven for about 15-20 minutes or until the fritters are lightly golden and a toothpick comes out clean.
While the fritters are baking, prepare the glaze by whisking together powdered sugar and milk in a small bowl until smooth. Adjust the consistency by adding more sugar or milk as desired.
Once the fritters are baked, remove them from the oven and allow them to cool slightly on the baking sheet.
Drizzle the glaze over the warm fritters before serving.
Notes
Serve warm on a platter, lightly dusted with extra powdered sugar, and garnished with a sprinkle of cinnamon or a few apple slices for a pop of color.
