In a mixing bowl, combine the rolled oats, almond milk, grated apple, chia seeds, cinnamon, maple syrup, vanilla extract, and salt.
Stir all the ingredients together until well combined, ensuring that the oats are saturated with the almond milk.
Divide the mixture into two jars or containers with lids.
Cover the jars and refrigerate overnight (or for at least 4 hours) to allow the oats to soak up the liquid and soften.
In the morning, give the oats a good stir. If they are too thick, add a splash more almond milk to reach your desired consistency.
Top with chopped walnuts, fresh apple slices, and an additional sprinkle of cinnamon before serving.
