Method
Preheat your oven to 375°F (190°C).
In a large mixing bowl, combine the ground beef, chopped onion, minced garlic, breadcrumbs, egg, Worcestershire sauce, thyme, salt, and pepper. Mix until well combined.
Form the meat mixture into four equal patties and set aside.
In a large oven-safe skillet or a 9x13-inch baking dish, add the beef broth and diced tomatoes. Stir to combine.
Layer the frozen mixed vegetables evenly over the broth and tomato mixture.
Carefully nestle the hamburger patties on top of the vegetable layer.
Spoon the mashed potatoes over the patties, spreading it out evenly to cover.
Top the mashed potatoes with shredded cheddar cheese.
Bake in the preheated oven for 30-35 minutes, until the beef is cooked through and the cheese is bubbly and golden.
Allow to cool slightly before serving.
