Method
In a large mixing bowl, combine the rolled oats, almond butter, and honey (or maple syrup). Stir until well blended.
Add the shredded coconut, dark chocolate chips, chopped almonds, vanilla extract, and sea salt to the mixture. Mix thoroughly until all ingredients are evenly distributed.
Using your hands, roll the mixture into small balls, about 1 inch in diameter. If the mixture is too sticky, dampen your hands slightly for easier rolling.
Place the energy bites on a lined baking sheet or plate.
Once all the mixture is rolled, refrigerate the bites for at least 30 minutes to firm up.
Store the almond joy energy bites in an airtight container in the fridge for up to 1 week.
