In a large mixing bowl, combine the rolled oats, almond butter, and honey (or maple syrup). Stir until well blended and smooth.
Add the shredded coconut, dark chocolate chips, chopped almonds, vanilla extract, and a pinch of sea salt. Mix thoroughly until all ingredients are evenly distributed.
Use your hands to form small bite-sized balls (about 1 inch in diameter) from the mixture. If the mixture is too sticky, you can dampen your hands slightly to make it easier to shape.
Once all the bites are shaped, place them on a baking sheet lined with parchment paper.
Refrigerate the bites for at least 30 minutes to help them set.
Store the energy bites in an airtight container in the refrigerator for up to one week.
