In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and red pepper flakes, sautéing for about 30 seconds until fragrant.
Add the cherry tomatoes to the skillet and cook for 3-4 minutes, stirring occasionally, until the tomatoes start to soften.
Pour in the vegetable broth and bring to a simmer. Add the gnocchi, stirring gently to combine. Cook for 2-3 minutes until the gnocchi begin to float to the top.
Once the gnocchi is cooked, reduce the heat to low and stir in the chopped spinach. Allow it to wilt for about 1-2 minutes, stirring frequently.
Stir in the grated Parmesan cheese, mixing until it melts and creates a creamy sauce. Season with salt and pepper to taste.
Remove from heat and let it sit for a minute to thicken slightly.
Serve hot, garnished with additional Parmesan cheese and fresh basil leaves if desired.
