Cook the Noodles: In a large pot of boiling water, cook the noodles according to package instructions. Drain and set aside.
Cook the Chicken: Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the sliced chicken and cook for about 5 minutes until browned and cooked through, stirring frequently. Remove the chicken from the skillet and set aside.
Sauté the Vegetables: In the same skillet, add the mixed vegetables, garlic, and ginger. Stir-fry for about 3-4 minutes, or until the vegetables are tender-crisp.
Combine Everything: Return the cooked chicken to the skillet with the vegetables. Add the cooked noodles to the pan.
Flavor It Up: Drizzle in the soy sauce, oyster sauce, hoisin sauce, and sesame oil. Toss everything together until well combined and heated through, about 2 minutes.
Garnish and Serve: Remove from heat and stir in the sliced green onions. Serve immediately, garnished with toasted sesame seeds.
